for those people who wanted to know why restaurant congee taste different is : 1. they brown the rice a bit before water is added. 2. they use blender to grind the rice to smaller bit before water too. 3. some restaurant also add some " glutinous rice" / sticky rice so the congee tastes smoother. my parents always eat congee with "fried bread stick" my mom always makes this dried fish peanut congee, she said it very popular in guangzhou which is where she is from.
cook the rice with LOTS of water on medium-low heat, keep it boiling, but let the steam run (no lids) And do wash the rice before boiling them =_=b
