Classical. Summer or winter? @BR: It is possible to find those unusually huge abalone dried, but it's near impossible to find them fresh somehow. And usually dried abalone are cooked in very flavourful sauces while fresh ones got steamed with ginger and garlic or whatnot (lighter flavouring)
