Guesswork: citrus it's clear? Be slightly more specific on what kind of indicator you are looking for. younger wine has a stronger smell of alcohol while older wine smell more acidic because alcohol ferments into acid when aged. LOL, cheese course would have been awesome...

WRONG. masi is italian. italian wine + spaghetti. gewurstraminer from alsace is best with coq au vin from alsace. and you got the bordeaux right. and as for your questions sauvignon blanc's taste and smell varies depending on the climate the grape is cultivated. but generally an acidic zestiness. good wine can be detected by smell alone. or, in other cases, you take a sip of the wine, mix it with your saliva. it dilutes the wine, thus allowing you to fully taste the wine. there its all based on the drinker's palate. OR, with a few certain wines, you can crush a bit of ground pepper, put it at the tip of your tongue, taste a bit of the wine. its going to emphasize a specific texture of that specific wine. the perfectly fermented/aged wine has a balance to its smell and taste. the alcohol smell is not overwhelming. and basically, the wine has to have some sort of distinctive "identity" to it.

what the hell are you drinking? sauvignon blanc generally has smell of zesty acidic. not all older wine smells savory and spicy with less fruit. example: pineau des charentes with quite a few years. still has a shit load smell of fruit. not all young wine has the smell of fruit. example: baco noir. that wine has a caramel smell, AND, esp when young, has a more concentrated smell of alcohol.
