its known as 2sided noodle or just crispy noodle ...an sometimes people put some stir fry mixture on top...

an the noodles are crunchy depending on how long u fry it for...
u can also pour a whisked egg misture over the top when u fry it so its got some colour an looks nicer

Tong Cu Mian (Crispy Noodles with Sugar and Vinegar) aka 糖醋麵

    Directions:
    1) Steam fresh noodles over hot water for 30 seconds. Remove from heat, divide into two sections and set aside.
    2) Heat oil in 8-inch skillet over medium heat. When hot, carefully place one section of noodles in skillet, twisting noodles into flat, pancake-like shapes. Pan-fry noodles until golden brown and crispy on both sides. Remove from heat, and drain on paper towels.
    3) Place sugar and vinegar in separate small serving bowls. When noodles are cooked, place on platter, cut into sections, and serve with sugar and vinegar.

Can anyone share a recipe for it?
