Abalone because you need to know how long it takes and add what type of flavor to it to make it good and soft or else you'll waste a lot of money.

Wow, I think there are some really hard to cook and elaborated looking Chinese cuisine...
I think you can watch some of those in the Recipe for the Heart series, etc.

I have heard of one very famous dish "Buddha Jumps Over the Wall".

*Some of these ingredients being chicken, Jinhua ham, pig’s trotters, quail eggs, shark fin, scallops, abalone, fish maw, sea cucumber, conpoy, ginseng, mushrooms, taro, bamboo shoots and many seasonings. The effort that goes into preparing this remarkable stew is noteworthy. The soup is prepared by cooking all ingredients on a low flame in chicken broth and Shaoxing wine and may require two days to be cooked to perfection. More exotic the ingredients used in the making, the more expensive this delicacy is bound to be.

Hahahaha.....yeap gotta soak and then slowly cook it for hours cause they are real hard but i like to eat abalone cause it is chewy...I can chew and chew and chew hahaha....I think a lot of food are real hard to cook so its quite hard to rank them and sometimes cooking it is easy but to make a perfect dish is the hard part...>.<
