Hello, just wondering if anyone has any good soup "bo-tong" recipes?? Or any home-style dishes from HK/Taiwan?

It's my first year out of home and I miss my mummy's soups and cooking!!!!

    Thanks!

    kk =)

well the easiest one to me:
is just add chicken powder( gai ching ) to boiling water, keep on adding till the taste is to ur liking...after that u can add some pak choi n let it boil...n add some of them little dried shrimp (ha mei) into it...

Note: u can always use chicken powder as the base and then add whateva vegetable of ur choice..

    Chicken Noodle soup:
    1 whole free range chicken
    some onions chopped into chunks
    some tomatoes chopped up aswel

    this one is very simple:
just put the whole chicken to boil n boil, add tomato and onions and celery if u wish.
    skim off the oil etc..
When the chicken is fully cooked, get it out and add salt, msg and fish sauce until the taste is right for u...

You can then shred the chicken and make some noodles ( aka fun) and eat it with the soup..

    Tomato and Egg soup:

    Ingredients:
    Tomatoes
    Egg
    Chicken Stock
    Spring ONiions
    1) Make a chicken powder soup base and add chopped tomatoes in...
    2) Wait until the soup is bubbling before adding the raw egg in. As soon as you add the egg in, stir it so its like swirls of egg,,,
    3) Add some chopped up spring onions for colour and you're done.

um...another soup lol : Lor See Fun Soup'
With the chicken powder base, u can also add prawns, fish balls and onions/tomatos...celery if you wish and just let it boil..
U can even make some pasta and eat it with the soup, this is called ' Lor See Fun' =)
    Add pepper for extra flavour.

Chicken stock is when you boil chicken parts or bones in water, with various vegetables and flavorings. When you get rid of all the ingredients, aclear borth is left, this is Chicken Stock.

However for the quick soups, use 雞精 aka Chicken Powder..

Sorry i got it mixed up, its actually chicken powder that you use...sorry =/
u can buy it in any asian or chinese supermarket i think..
it comes in a yellow tub with a pic of a chicken on it..lol

    p.s i think i should stop 4 now lol..but i do got a cuple more up my sleeves=)

You have any recipes for noodle with soup. I tried using Campbell chicken broth as soup base, but it tasted horrible.

ok i got a recipe left by my grandma
    its FISH HEAD SOUP
yeh yeh u might think it taste fishysmelly but its not... and very simple too
first get some fish head... the one i usually use are salt water fish and are as big as your head
and need to be fresh too
    first cleanup the scales
now just at salt and WHITE pepper to it... should add plenty ( would say sprinkle the white pepper everywhere on the head and add lots a salt around it))
    marinated it overnight
then boil the head for at least minutes... and should add lots of ginger( one or two big chunk of ginger)
the amount of water should be little more than enough to cover the head
and its done ... you can served the meat from the head with it, they are not losen up, this because of the salt u added making the meat texture hard
no need to add more salt to the soup
before u serve add some spring unions (preferable chinese spring union ''chung'') , and let it boil for 1 minute ,

or add some tofu and boil for another 5min to 10min, tofu helps cool you down (ha fo)

its pretty simple... its the right fish head thats hard to find and the amount salt you add
would recommend you snappers or groupers head

still got a few good one up my sleeve but thats it for now

steam a chicken to make bat chi gui and then use the "stock" from the steaming to act as your chicen stock, it works well. Or if you don't like the msg flavoring you can use the chicken to boil for the soup base just make sure to put the chicken into a porous bag (name escapes me now)
