***A favorite, triangle Tofu (can add meat as well, I usually mixed pork and shrimp, you don't have to fried it, pan fried or streaming works too using regular firm tofu also)

How about trying a Tomato and Tofu Soup? I make it all the time during the summer! I usually start out with the pork bones for the soup base, but if you want really simple, I suppose you could use any sort of stock. Add tomatoes and let simmer for awhile. If you like your tomatoes soft and mushy, let simmer for at least 1/2 hour. Bring soup back up to a boil, and then add tofu. If you like, you can add a beaten egg at the very end.

Crispy Chinese Salt and Pepper Tofu

    Serves 4

    Cooking time: 40 minutes

This crispy fried tofu features the simple yet stunning flavor combination of red pepper, black pepper and salt that usually reserved just for seafood in Chinese cuisine. While it’s fried this recipe still uses far less oil than its more traditional counterparts and far less than anything you’ll ever encounter in a restaurant.

    For the tofu:

    • 1 lb firm tofu, drained
    • 1 tablespoons dry sherry or rice wine
    • 2 teaspoons soy sauce
    • 3 tablespoons corn starch
    • 3-4 tablespoons of peanut oil for frying

    For the stir-fry:

    • 1 tablespoon peanut oil, optional
    • 2 cloves garlic, finely minced
    • ¼ inch cube ginger, peeled and minced
    • 1/4 teaspoon or to taste red pepper flakes
    • ½ teaspoon freshly ground black pepper
    • 1/4 teaspoon coarse salt, such as kosher salt
    • 2 teaspoons rice vinegar
    • 1 scallion, thinly sliced

    Directions

Press the tofu first: slice tofu into ½ thick slices and layer between sheets clean dish towels or paper towels. Lay on a cutting board and weigh down with another cutting board or other heavy items. For best results place entire assembly in a sink and allow liquid to drain from tofu for 20 minutes. When ready, gently separate tofu from towels and cut into ½ inch cubes.

In a medium bowl combine sherry and soy sauce. Add cubed tofu and toss to combine. Set tofu aside for 10 minutes, stirring occasionally.

When ready to fry tofu, heat peanut oil over medium-high in a large, heavy skillet or wok. Sift cornstarch into a shallow bowl. Drain tofu from marinade, shake off any excess liquid and roll tofu into cornstarch. Using a slotted spatula, carefully lower tofu into oil and be carefully of splattering. Fry tofu for 3-4 minutes, not stirring to allow it brown on one side, then carefully turn cubes and fry for an additional 3-4 minutes on the other side to brown. Turn and fry cubes an additional 1-2 times to brown sides, if necessary. Remove browned tofu from pan and place in a large dish or bowl. Remove skillet from heat and allow it to cool for 10 minutes. Drain or wipe away any excess oil or browned bits.

Pour 1 tablespoon peanut oil into skillet and heat to medium high. Add garlic and ginger, stirring quickly for 30 seconds till sizzling and fragrant. Add red pepper flakes, black pepper, salt and tofu and fry for 1 minute, stirring constantly and gently breaking up any chunks of tofu that stick together. Remove from heat, sprinkle with rice vinegar and scallions and move to a serving platter.

    Salt and Pepper Tofu

    Ingredients

    • 1 lb firm tofu
    • 1-2 teaspoons salt (depends how salty you want it to be)
    • 2 teaspoons garlic powder
    • 1 teaspoon fresh ground black pepper
    • 3 tablespoons cornstarch
    • 3 tablespoons vegetable oil
    Directions

    1. Drain the tofu: Place several paper towels on a cutting board; place the tofu on the cutting board, and then place a heavy object such as a plate or book on top.
    2. Drain the tofu for at least 15 minutes, changing the paper towels as required (If possible, it's helpful to tilt the cutting board so that the water drains directly into the sink).
    3. Cut the tofu into cubes or slices.
    4. Mix together the tofu with the salt, garlic powder, and black pepper, and allow to marinate for 1-2 hours in the refrigerator.
    5. Toss the tofu cubes with cornstarch to coat.
    6. Heat oil in wok or large skillet.
    7. Carefully add the tofu to the wok, add fry in small batches until tofu is golden; drain on paper toweling, and serve hot.
    8. Serve with Asian condiments, if desired.

    Fried Tofu Sticks

    Ingredients

    • ½ cup dried bread crumbs
    • 1 tsp dried oregano
    • ½ tsp dried thyme
    • 1 tsp salt
    • ¼ tsp freshly ground black pepper
    • 16 ounces soft or firm tofu
    • 1½ cup canola oil
    • ½ cup olive oil
    • 2 large eggs, beaten
    • honey mustard

    Directions

    1. Toast the bread crumbs in a dry skillet over medium heat, stirring often until they are golden brown, about 5 minutes. Transfer to a bowl and let cool to room temperature, about 20 minutes. Mix in the oregano, thyme, salt, and pepper.
    2. Cut the block tofu horizontally in half. Then cut it in half the long way. Make 5 cuts perpendicular to the long cut, creating 24 pieces. Cover a sheet pan with paper towels. Place the tofu in one layer on the towels. Blot the tofu, pressing it gently with additional towels to remove excess moisture.
    3. Heat the oil in a deep skillet to 375 degrees F. Cover a second baking sheet with more paper towels. Place the beaten eggs in a wide shallow dish.
    4. Dip the tofu in the egg. Dredge the pieces in the bread crumb mixture until completely coated. Slip the breaded tofu into the hot oil, 3 to 4 pieces at a time. Fry until golden brown, 2 to 3 minutes. Turn and brown on the other side, 1 to 2 minutes. Remove from the pan using a slotted spoon. Drain on paper towels.
    5. Serve immediately, accompanied by mustard for dipping. Or, let the sticks cool and arrange them in a single layer on baking sheet. Cover with foil and refrigerate for up to 4 hours. Before serving, recrisp by baking in a 350 degrees F oven for about 12 minutes.

I don't know how you could mistake salt for sugar...lol
