I failed once at this kind of stuff but I'll have another go. By cousin's cousin do you mean your dad's sister-in-law's niece (dad's brother's wife's nephew/niece)? If so, that would make your cousin's cousin your aunt/uncle's niece.

^ removed just means a different generation... so "once removed" is one generation difference... "twice removed" is two generations difference... and i think once it goes outside of your family - i.e. when its your uncle/aunt's brother/sister-in-law's kids then you aren't really related...
