Yes, this is the way to do it, you need to fridge the rice so the moisture is taken out hence the fried rice is nice on the wok
You can use Marmite (Vege) or Bovril (Beef or Chicken). It's available in non Asian stores as well. Trust me. People who doesn't like Marmite liked this when I added into the fried rice. It's gives the rice colour and flavour. To make fried rice I use Spam + Mixed Vegie + Marmite/Bovril + Eggs. It's all quick and easy.
Lotso garlic, slab o butter, enuff eggs to your taste, a little white pepper... I'm a cilantro guy, so i add some in sometimes instead of green onions... and either bbq pork or spam or chicken... make sure though u get that rice pretty dry though, i personally believe there's a difference between "fry rice" and "fried rice"... if u had benihana fried rice b4... this may taste similar, or better if ur a good cook o... and i absolutely hate maggi... i also use soy sauce sparingly... even the low sodium variety... crazy white people souping their rice with soy sauce disturbs me...

My grandfather who is a chef said that when you want to make fried rice, you should use leftover rice from yesterday. First you put oil into the pan and then once it's hot, put the rice. Stir the rice around until all of the rice is separated. And then add soy sauce. It's your own preference of how much you want to add. But add enough so that every grain of rice is covered with soy sauce. And then add an raw egg over it and mix it well. I recommend you to add some grated ginger to it because it taste very good.
