Chicken 'Fun' soup: 1 whole free range chicken some onions chopped into chunks some tomatoes chopped up aswel this one is very simple: just put the whole chicken to boil n boil, add tomato and onions and celery if u wish. skim off the oil etc.. When the chicken is fully cooked, get it out and add salt, msg and fish sauce until the taste is right for u... You can then shred the chicken and make some noodles ( aka fun) and eat it with the soup.. or this one: Lor See Fun Soup' With the chicken powder base, u can also add prawns, fish balls and onions/tomatos...celery if you wish and just let it boil.. U can even make some pasta and eat it with the soup, this is called ' Lor See Fun' =) Add pepper for extra flavour.

I love soup! My parents used to own a restaurant, so here is a quick easy soup and popular with the customers: Chicken Sweet Corn Soup! Ingredients: Serving for about 4 people: a can of Creamed corn about 400 - 500 grm a good chicken stock about 4 cups (ask butcher for bag of chicken bones, puit it into a big pot and boil for half a day, discard bones strain clear chicken stock or if too hard just buy premade stuff, but find one that you like otherwise maybe too salty or too much msg ) 1 breast fillet of chicken finely chopped or minced ground ginger, finely chopped garlic, shallots/spring onions 1 tsp oil 2 eggs fried thinly sliced garlic (topping soup garnish can make it slice a garlic clove thinly and then fry in a shallow pan till brown and crispy or buy packet stuff) 1. Heat a large pan over high heat, add oil and ground ginger, garlic, shallots/spring onions stir for about 1 - 2 minutes. 2. Pour in the chicken stock and can of cream corn, chicken fillet mince/chopped. 3. Bring to the boil while stirring make sure the chicken is cooked,reduce to low so it is simmering. 4. put in a bit of salt and pepper to taste. 5. Stir in your egg white so you get the cool egg streaky thing going in the soup, garnish with your fried sliced garlic 6. Enjoy your soup. *Pro-Tip! : - If you ever find your soup a little too thin, you can thicken it up using some corn starch. 1. get a small bowl put in about 1/2 spoon of corn starch add a bit of the thin soup and stir. 2. Then add it back into the soup and viola...thicker soup. Have fun and let us know how you go with the soup

Bird's Nest with Ginseng Ingredients # 50g bird's nest # 20g sliced ginseng (pau som) # 100–125g rock sugar # 500ml water Method Soak bird's nest in water until soft. Pick out any foreign matter such as twigs and tiny feathers. Wash nest in several changes of water until it is spotlessly clean. Place all ingredients in a tureen and double-boil for two to two and a half hours in a slow cooker. Serve the delicacy warm. Chicken Herbal Soup Ingredients # 1/2 a chicken, chopped into chunky pieces # 20g tong sum # 8 red dates, seeded # 30g wai sun # 1 carrot, cut into wedges # 30g yuk chuk # 1 litre hot water Seasoning : # Salt and sugar to taste Method Put all ingredients into a double-boiler pot and double-boil for 1–1 ½ hours. Add seasoning and serve soup while hot. Note For yuk chok, get hoi chuk which is tastier and sweeter when cooked in soups. Chicken can be replaced with black chicken. Herbal Chicken Soup Ingredients # 500g chicken, skinned and cut into 4 large pieces # 2 cups boiling water Herbs: # 25g yoke chok # 25g tong sum # 20g yong sum soe # 10g pak kei # 6 red dates Method Bring water to a boil in the bottom section of a double boiler pot. Place all the herbs and the chicken in the top pot and double boil for two hours. Keep replenishing the hot water in the bottom pot when it runs low. When soup is ready, add salt to taste and serve hot. Note Boiling the soup in a double-boiler will yield a clear soup, which is considered more "superior". You can also use an electric slow cooker, pressure cooker or just boil it in a pot as usual.v

Simple chicken soup a whole stewing chicken lots of carrots (if you are serving this to people try to buy the multipack of colored carrots, yellow, red, and orange) salt and white pepper boil the chicken for an hour and then add the carrots in and boil for another half hour yumm!
mushroom soup mushrooms (any type you want, button, shitaki (dong gu), wild mushroom, but must be fresh) chicken stock onions garlic sherry butter parsley sauté the onions and mushrooms in butter add the sherry and let is shimmer and pour in the chicken stock and chopped up parsley and let it simmer for at least ten minutes options 1) want cream of? than add heavy cream, just a little will do, it will go a long way 2) want a smooth soup? use a stick blender and blend it up, it will also give a creamy texture without the cream
Thank you! It turned out really nice - just like the restaurant ones hehehe My usual style of corn soup is to put in melted butter and also sub the chicken mince with diced bacon or "gong-wan" (pork balls) that's more 'western' style though!
