got this from my class...didn't even see the demonstration Cauliflower Soup Ingredients: 4 ea. Celery stalks, coarsely chopped 1 ea. Onion, peeled and coarsely chopped 2 cups Chopped, cleaned cauliflower 1/2 cup Unsalted butter 1/3 cup All purpose flour 3 cups Chicken stock 1 cup Water 1 cup 35% Cream TT Salt and pepper Method: Boil 3 cups of water and make up a batch of chicken stock using the powder mix. When finished, add one additional cup of water and set aside. Heat butter in a pot big enough to hold all of the ingredients. Add the chopped celery, onion and cauliflower and fry at medium heat until vegetables begin to get softened, about 8-10 minutes. Remove pot from heat and puree the vegetables in a food processor, only until just blended. Return mixture to the same pot and add flour. Mix together and continue cooking until flour is cooked, approx. 3 minutes. Slowly whisk in the chicken stock being sure to keep the mixture smooth and without lumps. Bring to a boil. Reduce heat to warm. Soup can be stored at this point or frozen if needs be. If serving now, stir in cream and heat through. Serve immediately.
