It is the longevity noodle ( E ming ). They are made of a single straw of noodle fried dry in a circular shape ( = ? circle of life ), served in soup base.

what its suppose to mean is having longer life because what noodles mean is supposedly made from one piece of flour and strechted out so representing the longness of life so supposedly when you eat the noodles you are supposedly not to break it and eat like the noodles like all at once like a small portion and by not breaking it dont mean not to chew it just dont break it while you are slurping the noodle in your mouth hope this helps

u dont eat just regular noodles, those noodles are called "cheong sau meen"...for my case, it is only served during the birthday of an middle age or elderly person
^Lol.. u dun hafta b old n aging when u eat noodles at ur birthday.. It's just a tradition that all Chinese may adhere to; be it young or old.
But generally kids would prefer having cake full of icings and some such instead of some noodle, so they wouldn't appreciate the significance anyways... Plus, it's healthier for a grown-up to eat the light noodle instead of the hyper sweet cake =_=b
lol babyrain, im not saying that younger ppl cant have it served during thier birthday...just that it means more to an elderly person compared to a 10 year old kid =P
